1onion, finely diced
4clovesgarlic, minced
3tbsptomato paste
28ozcrushed tomatoes
2tspItalian seasoning
½cupfresh basil, thinly sliced
1tspkosher salt
½tspblack pepper
1tspsugar
32oz.gnocchi
1cupparmesan, freshly grated

Instructions
In a small saucepan, heat the olive oil over medium heat until shimmering. Add the onion and sauté until soft and translucent, about 5 minutes. Add the garlic and cook, stirring for 1 minute until the garlic is fragrant. Add the tomato paste and crushed tomatoes, stirring until the paste is incorporated. Add Italian seasoning, basil, salt, pepper, and sugar. Cover and simmer over medium-low heat for 15 minutes.
Cook the gnocchi according to the directions on the package, drain and add to the sauce. Taste for seasoning and adjust if needed.
To serve, spoon into bowls and top with freshly grated parmesan.
Notes
PREP AHEAD:
The sauce can be made up to 4 days ahead and stored in an airtight container in the refrigerator. Reheat on medium-low on the stovetop to serve.
NOTES:
Be sure to taste the sauce to check for seasoning. Different brands of canned tomatoes add different amounts of salt so it’s impossible to know how much to season without tasting.
This is a great meatless meal, but if you’d like something a little heartier, try adding 1 lb of ground beef, turkey, or chicken to the sauce. To do this, cook and drain the meat first and set aside. Make the rest of the sauce according to the directions, then add the meat back in before simmering (when you add the basil and other seasonings).
Add some greens to the sauce by throwing in a couple of handfuls of baby spinach before you simmer.
