Slow Cooker White Chicken Chili
Loop & DashThis White Chicken Chili is a great alternative to traditional beef chili. It’s great for leftovers, too!
Servings: 8 servings
Ingredients
- 2 tbsp olive oil
- 1 yellow onion
- 1 jalapeno, seeded and finely chopped
- 4 cloves garlic, finely minced
- 28 oz diced green chilies
- 2 tsp ground cumin
- 4 cups chicken stock
- 45 oz cannellini beans, drained and rinsed
- 1 rotisserie chicken, skin and bones removed and shredded
- 3 tbsp fresh oregano leaves, chopped
- ⅓ cup cornmeal
- 2 cups shredded cheddar cheese, for serving
- sour cream, for serving
- fresh cilantro, for serving
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and jalapeno, season with a pinch of salt and pepper, and saute for about 5 minutes, until the onion is translucent and soft. Add the garlic and cook for another minute more. Stir in the green chilies. Add the cumin and cook for another minute. Whisk in 2 cups of the chicken stock and bring to a boil. Pour this mixture into the insert of a slow cooker.
- Stir in the 2 remaining cups of chicken broth, cannellini beans, chicken, and oregano.
- Put the cornmeal in a small bowl and ladle in about 1 cup of the chili. Whisk to combine and stir back into the chili to combine. This will help to thicken the chili just a bit.
- Cook on low for 8 hours.
- Serve with cheese, cilantro, and sour cream.
Notes
PREP AHEAD
- Chop the onion and dice the jalapeno in advance and store in an airtight container in the refrigerator until you’re ready to use.
- Mince the garlic ahead of time and store in an airtight container in the refrigerator until you’re ready to use.
- You can prepare everything to the point of cooking in the slow cooker in advance and store in the refrigerator until the day you would like to cook it.
- This is a great recipe for leftover chicken. Replace the rotisserie chicken with whatever leftover chicken you may have on hand.
- You can make this spicier by leaving the seeds in the jalapeno. You could also add additional jalapeno on top when serving.
- Any kind of white bean will work for this.
