Skillet Sausages with Spinach & White Beans
Loop & DashThis dish comes together in a flash. Using pre-cooked sausages and canned beans saves time and the flavor combo is amazing!
Servings: 6 servings
Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 lbs Italian chicken sausages, fully cooked sliced
- 3 15.5 oz cans cannellini beans, drained and rinsed
- 16 oz baby spinach
Instructions
- Heat the olive oil in a large skillet over medium-high heat. When shimmering, add the onion and sauté until soft and translucent.
- Add the sausages to the pan and cook for 5-7 minutes, until the sausages are cooked and starting to brown.
- Add the beans and spinach to the skillet and cook for another 3-5 minutes, tossing the spinach until it is wilted and the beans are warmed through.
- Season with salt and pepper to taste and serve.
Notes
- This recipe is equally good with sausage flavors other than Italian.
- If you opt to purchase sausages that are not pre-cooked, you will need to add to the cooking time to ensure they’re done.
- Slice the sausages and store them in an airtight container in the refrigerator until you’re ready to use.
- Chop the onion and store it in a resealable plastic bag in the refrigerator until ready to use.
