Chicken Cordon Bleu Casserole

All of the flavor of Chicken Cordon Bleu in a creamy casserole

Ingredients

Casserole:

  • 1 rotisserie chicken, skin removed and meat shredded
  • ½ lb deli ham, thinly sliced and chopped
  • ½ lb deli swiss cheese, thinly sliced

Sauce:

  • 5 tbsp butter
  • 5 tbsp flour
  • 3 ½ cups milk
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp Dijon mustard
  • 1 ¾ tsp kosher salt
  • ¾ tsp smoked paprika
  • ¼ tsp black pepper

Topping:

  • 6 tbsp butter, melted
  • 1 ½ cups panko bread crumbs
  • ¾ tsp seasoning salt, like Lowry’s

Instructions

  • Preheat oven to 350℉.  Lightly grease a 9”X13” baking dish.
  • Spread the shredded chicken in a single layer on the bottom of the baking dish.  Layer the ham over the chicken and cover with the swiss cheese slices.  Set aside.
  • To make the sauce, melt the butter in a small saucepan over medium heat.  Sprinkle in the flour and whisk to combine.  Cook for a couple of minutes, constantly stirring until the mixture is smooth and bubbly.  Don’t let the roux brown.  Slowly whisk in the milk and stir until smooth.  Continue cooking, stirring constantly until the sauce thickens.  Add the lemon juice, mustard, salt, pepper, and paprika and stir to combine.  Bring back to a boil, then remove from the heat.  Pour the sauce over the chicken, ham, and cheese.  Spread it over the top and make sure it gets down around the edges.  
  • In a small bowl, combine the melted butter, bread crumbs, and seasoning salt.  Sprinkle topping evenly over the casserole.
  • Bake the casserole for 45 to 50 minutes until browned and bubbly.  Remove from the oven and let stand for 5-10 minutes before serving.

Notes

  • Be sure to get the ham and Swiss cheese from the deli.  It really does make a difference!
  • If you can’t find a large rotisserie chicken, use two.
  • You can also cook your own chicken if you prefer.  Use 1.5 lbs of boneless skinless chicken breasts.
  • This is great served with rice and a green vegetable!
 
PREP AHEAD
  • You can assemble the casserole up to 2 days in advance.  Store covered in the refrigerator.  Before cooking, remove from the refrigerator for 30 minutes or add extra cooking time.
